Focusing Mystery ?

I have a bit of a Focusing Mystery , for the first half of the day I had my camera in AF-S mode , all good camera locked on almost every time. Great !!!!!!!!!!

Then 1/2 way in the day the camera had trouble locking on anything . So I switched to continuous mode AF-C and "boom" almost every shot was in focus .

Here are a couple of example shots. So Im trying to figure out when I should be in AF-S mode and when I should be in AF-C mode or is it a matter of trial and Error ?
