Using softbox or octobox with speedlights

It seems I already ask this question but I didn't find the subject.
First I wish a Happy new year to everyone.

So I'd like to know using a octabox or softbox (except the form of catchlight in the eyes, what's the really difference ?) with speedlight could be nice.
My idea as I've a sb-910, to buy later a soft or octa 36inch with the RFI adaptator profot for speedlight. I think I need 2 speedlight, so using a light like the yongnuo 568 or sb-700 could be enough.
Of course I know it can be like the b1... but I've a limited budget.
Mainly exterior portraits.
What do you think ?
