How to keep manual exposure settings from changing on D300s

I have had many Nikons including the D300 and now have the D300s.
Normally, when I choose Manual mode, with auto ISO off, exp at 0, the settings for f stop and speed STAY where i set them.
I don't understand why after each shot, the settings for speed change.
For example, I chose f8 at 1/500th sec. After I shot, it change to f8 at 1/100th sec.
I can't find a way to keep my settings. I am doing panoramics and want to maintain the same exposure throughout all my shots.
