Am I alone in trying to keep things simple with a D700, a couple of SB800's and Neil's black foamy thing as a light modifier for dynamic situations i.e. weddings and event photography. I also occasionally use the SB800's off camera and triggered by the pop up flash (TTL and manual) but again keeping things simple. I would love to hear your comments on using the KISS principle.

You already have enough there to use as Master & Slave speedlights to use with the softbox.
Then you either need a lightstand, or a monopod (held up by an assistant), and you're off in another direction.
A battery pack (or two) for your speedlights will also make a difference in your flash photography, and letting your speedlights recycle faster.
I have the accessories you mention but do not use an assistant but will give your suggestions some thought.
