It sounds a lot like a photographer who is spending beyond her means and this is one way of recouping. Who knows how many customers just paid the extra to get their albums. Bad business for sure.
It depends on your light source. You should have at least the basic daylight, tungsten, fluorescent, flash, etc. settings, if I'm reading your question correctly.
I have found when "relying" on a grey card that it gives me many different readings depending on where I click on in in Camera Raw. So, I just set my camera according to Kelvins and that usually gets me pretty close.
That's the one thing the Westcott vid points out is that the shallow has a hot spot, probably more so than the deep. I'd like to get another one but will probably get a Sola 4 first. Can never have too many light sources or modifiers on hand.

I should say that I lost control of ETTL, changing the settings on the ST but the 600 would not follow. It used to follow. After testing at home, the flash is now compensating but not displaying the change on the 600.

Yes. Adjustments made on the ST were not being transmitted to the 600. Now the FEC works but it's not "reading" so on the FEC diagram of either 600.

I like mine so far. Huge improvement over my experience with the JRX Radiopoppers. I really love the new screen layout, too. Leaps and bounds ahead of the older EX systems.
Got 2 600s with the ST transmitter. What a difference. Just not having to jump around to fix stuff is well worth the price of admission. And the 200mm zoom is fantastic.
Another vote for the 35mm. If the 70-200 is a 2.8 I'd bring that too. Learn to bounce flash in ETTL and direct flash in manual and you should get by no problem.
I think the problem in my area is that there aren't a lot of photographers to begin with vs a more populated area. The one resource I do have is word-of-mouth/like-minded friends. I find they are easy to deal with when schedules permit.
I can't think of any reason for an articulating screen for what I do. I thinks it's more of a video shooters thing, honestly. Give me a nice solid-feel-in-the-hand body with just an LCD screen and I'm a happy man.
