LCD Blinkie, False info ? Can you rely on them.

Hi Everyone
I shot a wedding yesterday and I came across a recurring problem.
The image below is a good example , ( it not a great shot , just an example )
Shot with Raw , using a Stofen Diffuser.


After the shot was taken I quickly checked the LCD screen , and the whole subject blinked black.

I thought the shot was lost, However when I opened it up in Adobe Raw using the ProPhoto RGB there was detail.

So Im a little confused here , if I base my exposure on Blinkes am I causing under exposure?

Also it causes me to adjust my FEC more than needed. I looking for a little guidance here.
